How It's Made

From Cherry to Cup

PICKED AT THE RIGHT MOMENT

At Café Grato, exceptional coffee begins long before roasting. We source only meticulously hand-selected cherries at peak ripeness, chosen to ensure consistency. By eliminating underripe and overripe fruit, we preserve the integrity of the bean and allow each roast to reveal its fullest character. Delivering a refined, uncompromising coffee experience in every cup.

ROASTED IN SEASON; CRAFTED FOR PEAK EXPRESSION

At Café Grato we roast our beans within the peak green coffee window of 30 -90 days from the harvest. During this stage, the coffee expresses its freshness and most vibrant potential before long-term aging dulls aromatics and acidity. The coffee's ideal maturation window allows the roast to fully enhance the beans natural profile, sweetness, and complexity.

From super premium through excelso gourmet

Our beans are carefully graded by size to ensure greater consistency throughout the roasting process. By roasting each size-selected batch individually, we can tailor every roast to honour the unique character of the bean. It is a craft guided by precision and respect for origin. Preserving clarity, balance, sweetness, and the distinctive expression of each harvest.
