Grading to size is important for consistency. Allowing for more effective tailoring of the roast to suit the selected sized-based batches that honours the character of the bean. A craft of precision, preserving clarity, balance, sweetness and expression of origin, allowing the terroir to shine through.

In the context of the slower growing high-altitude farms, larger beans are an indicator of quality and maturity. Where the coffee cherry is allowed to ripen fully on the branch and the seed (the bean) has the maximum time to absorb nutrients and develop whilst maintaining high density and hardness. These possess greater sweetness, a fuller body, and a deeper, more layered profile because of the extended maturation process.

Our tiers range from Super Premium, our rarest top-tier largest size beans, based on being retained in a 19/64 inch screen prior to roasting, through to Excelso Gourmet, our most accessible specialty high-quality Colombian export grade based on a 15/64 inch screen.
